Revolutionizing cuisine: Slovenian vegan startup juicy marbles unveils edible plant-based bones

A vegan food startup in Slovenia is extremely close to realizing the notion of producing edible vegan bones. The startup, Juicy Marbles, originally intended to make compostable bones. They later realized, however, that they could make bones that could be directly ingested.

The first items will become accessible in the UK, EU, and US as early as late August, according to the business. The product’s price has not yet been determined, and the company is seeking user feedback before changing the recipe, name, and packaging.

Even as the high cost of living problem drives their business to the ground, plant-based meat companies have concentrated on innovation.

The idea of creating bones from plants, according to Vladimir Mikovi, co-founder of Juicy Marbles, was “just fun.” He said, “To some, bones from plants may be an ideological provocation, but we shouldn’t take these things too seriously.”

“There is a culture of celebration, sharing, and belonging around meat [and] anyone cutting down on meat can feel excluded from cultural traditions,” he added.

How to cook plant-based bones?

According to the business, plant-based bones must be baked or fried before ingestion. Baking the bones can convert them into a crispy snack.

“We started off just by not wanting the bones to be garbage,” Mićković said.

“My hope is that we can also infuse the bones with flavor, so you could also cook them in a broth. The most important thing is that we see how people react,” he further said.

Plant-based meat substitutes are becoming increasingly popular

Alternative meat sources are becoming more prevalent. Aleph Farms, an Israeli startup, has taken a crucial step forward by submitting a sales approval application to the UK’s food regulator. They have devised a novel method of producing steak in vats using real meat cells.

Following the approval of two grown chicken products in the United States in June, this application marks a significant milestone as the first of its kind in Europe. Another notable advancement comes from Mewery, a Czech startup that debuted a burger made from grown pork around the same period.
